Aam Ras (Mango Drink)

Aam Ras is basically the pulp of the sweet mango which is almost always unadulterated. This is an absolute must for summer months when mangoes are plenty. Sometimes this mango pulp is mixed with milk, some even like to add ghee or some other kind of  taste enhancing ingredients.  However, I prefer to keep it as minimal as possible.

 

INGREDIENTS

  • 500 gm of mango pulp — pureed and strained well
  • a teaspoon of cardamom powder (optional)
  • powdered sugar
  • water or milk
  • 30 ml of lime juice (optional — only if you are not adding milk)
  • 20 gm of chaat masala powder (optional — only if you are not adding milk)
  • 5 gm of cumin that has been crushed (optional — only if you are not adding milk)

 

 

METHOD 1 (No Milk)

  • Mix in all the ingredients, except for water and sugar.
  • According to your taste, add water and sugar to get preferred consistency and sweetness.
  • Put it in the fridge to get chilled.
  • Serve the Aam Ras cold.

METHOD 2 (With Milk)

  • Stir in the sugar to the mango pulp till it blends properly.
  • You may add cardamom powder if you like the flavour.
  • Boil milk and let it cool down completely.
  • Through a strainer, pour in the cooled down milk to the mango pulp and sugar blend. Keep stirring continuously through the process.
  • Put it in the fridge to get chilled.
  • Serve the Aam Ras cold.
