Daal puri/ Lentil stuffed flat bread(From My Kitchen)

Daal Puri is a delicacy with which every Bengali associates a fond memory. Every family has its own favourite sweet shop from where these are procured for breakfast on holidays or special days. Literally explained, daal refers to lentils, and puri is a deep fried version of Indian flat bread. So put together, dal puri means a deep fried Indian flatbread made with lentil fillings. This sounds very scientific, and dry perhaps? But the aroma that will come out of your kitchen while making this, and then the taste of it, will make your mouth water up for sure.

Ingredients

  • Chholar Dal/ Bengal gram lentils
  • Salt
  • Green chillies
  • Flour
  • Rawa/ Semolina
  • Nigella seeds
  • Asafoetida (Hing)
  • Roasted Cumin and Coriander
  • Pinch of turmeric
  • Roasted red chillies

 

Preparation

  • Soak the Bengal Gram Lentils for 12 hours.
  • Make a paste of it with a pinch of salt and green chillies
  • Grind together the roasted red chillies, coriander and cumin.
  • Heat oil in a pan and add the lentil paste.
  • Add the powdered spices, salt to taste and asafoetida.
  • See to it that the paste doesn’t burn by stirring continuously.
  • When the concoction starts separating from the pan – then you know that your filling is ready. Let it come to room temperature so that you can use your hands to stuff the dough with the filling.
  • Make a dough out of the flour, to which you add the semolina, by kneading well using water and a pinch of salt
  • Add a pinch of nigella seeds to the dough
  • Make small balls out of the dough
  • Put the stuffing made of this gram flour and seal the balls.
  • Roll them out and fry them in hot oil.
  • Serve along with potato curry
