Mach er Kochuri/ Fish Kochuri by Soutik Singha

Mach er Kochuri or Fish Kochuri is a variation of , say Koraishuti or Hing er kochuri. But the difference is, at times Mach er kochuri doesn’t need an embellishment, or accompaniment and can be served as a snack by itself. This recipe was kindly contributed to me by South Singha, an Engineer by profession.

Ingredients –

  • Flour
  • Ghee
  • salt
  • Fish
  • chholar dal/ Bengal gram lentil
  • onion
  • ginger-garlic paste
  • garam masala
  • sugar
  • oil
  • green chilies

Preparation-

  • Knead and prepare a dough with flour, water, a pinch of salt, sugar and ghee. Keep aside.
  • Boil the fish with salt & turmeric
  • Make a paste of the fish. Throw away the bones and the skin.
  • Soak the Chholar Dal 12 to 14 hours earlier
  • Make a paste of the Chholar dal
  • Heat oil in a pan and fry chopped onion, ginger-garlic paste, chopped green chilies,a dash of lemon and garam masala.
  • Now add the fish paste to this and keep stirring.
  • Add the Dal paste and add salt & Sugar
  • Once this paste becomes absolutely dry, add some coriander leaves to it.
  • Let this filling cool
  • Make small balls out of the kneaded flour, fill small portions of this filling and make round shapes.
  • Deep fry
