Narkeler Kochuri/ Coconut Kachori (Puri)
And then there are food items that one associate with some specific person or people. For me, narkel-er kochuri (coconut kachori/puri) is a reminder of the warmth of my maternal grandmother’s kitchen. She was always happily bustling around the kitchen – whipping up varieties of delicacies for each meal. With she around, you were always spoilt for choice. The person is no more, but her huge repertoire of recipes remain – this being one such.
Ingredients –
- Grated Coconut
- Onion
- Raisins
- Green chilies
- Ginger (grated)
- Coriander leaves
- Flour
- Oil
- Salt
Preparation –
- Soak the chopped onion in water
- Soak the grated coconut in water if it isn’t fresh (I sometimes grate the coconut a day before and store in an airtight container in the fridge since grating takes some time)
- Knead the flour with salt & oil
- Now drain the coconut & the onions from water, and mix t with raisins, chopped green chilies, ginger and chopped coriander leaves
- Now roll out small chapatti-s from the dough and fill a side with these stuffing
- Fold the same and close it.
- Seal properly so that fillings do not come out
- Roll out to give the shape of a puri
- Heat oil in a vessel
- Deep fry
- Drain from oil
- Serve with a dip of your choice
