Spinach and Curd Condiment

My mother is hooked to cookery shows, mostly on Hindi and Bengali TV channels. The result is mostly positive; for her years of experience in the kitchen helps her to discard what she thinks would not be palatable to the family. This spinach and curd based condiment recipe is a simple dish that my mom shared yesterday. She being purely vegetarian, we are always on the lookout for recipes that are apt for her. Ma is also pretty addicted to junk food. I feed this would be a lovely dip for nachos or even papri; or even with her favourite crispy thin crust pizza. She claims she got it made and that it tastes good. Now some of you please try and test, and also post picture for meĀ .

 

Ingredients

  • Spinach
  • Curd
  • Water
  • Oil
  • Green chillies
  • Rock Salt
  • Cumin Seeds
  • Mustard Seeds

 

Method

 

  • Wash the spinach well. Discard the stems and take only the leaves. Now boil water. Drop the spinach in it, and keep for just about a minute. Now drain them, and run ice cold water. This retains the crispiness.
  • Now put these in the blender along with green chilies and coarse grind.
  • Now take some hung curd and beat well with salt and rock salt. Add the spinach + green chilies paste to it.
  • Now heat oil (vegetable oil) in a pan. Temper with cumin and mustard seeds. Let them crackle.
  • Turn off gas. Add the curd spinach concoction. Mix well. Serve.
