Chhanar Payesh/ Cottage Cheese Pudding

Bengalis are famous for their sweet tooth, so we get this great dessert recipe of Channar Payesh from their kitchen. Payesh usually is made with Gobindobhog rice. In this recipe however, chaana has been used that is also derived from milk. You can either make it fresh at home using milk and lemon juice or buy it from the market; channa is readily available at most sweet shops. Using the hung form of cottage cheese and this recipe, you can too create this creamy and rich authentic Bengali dessert. This dessert can be a great ending to an amazing meal.

 

Ingredients:

  • Hung cottage cheese (chhana): 200 gms

  • Milk: 3 Ltrs

  • Ghee: 2 tsp

  • Rose Water: 2/3 Tbsp

  • Cashew nut, Pistachio, Almond: as per requirement (for garnishing)

  • Sugar: 150 gms

Preparation

  • Crumble the cottage cheese using your hands.

  • Fry them in ghee

  • Pour the milk in a heavy-bottomed pan and thicken over medium heat (stir continuously to prevent from burning)

  • Pour the sugar and mix

  • Add the fried chhana pieces

  • Take off the flame when it starts to boil

  • Let it cool

  • Sprinkle with chopped nuts

  • Add a dash of rose water

  • Serve chilled
