Chocolate Coffee Cake By Sulagna Bhattacharjee

A full time teacher and a part time cook, I love rustling up easy dishes provided its cold and comfortable enough to stand by the stove!!!!

 

 

Ingredients:

  • Maida (Flour) 1 cup
  • Powdered sugar 1 cup
  • Butter 2 tbsps
  • Eggs 2
  • Unsweetened cocoa powder half cup
  • Oil one third cup
  • Baking powder 1 tbsp
  • Coffee Powder 2 tbsp
  • Vanilla essence 5 ml
  • Salt a pinch
  • Milk (If needed)
  • Cherries (optional)

 

 

Process:

FLOUR MIX:

  • Mix maida baking powder and salt.
  • Sieve them for at least 3 times.
  • Mix cocoa powder and coffee powder with flour and keep aside.

EGG MIX:

  • Beat the eggs for at least 2 mins and set aside.
  • Beat the sugar and butter, add whisked eggs and oil to sugar and butter mix.
  • Keep beating all of it together for 3 mins at least.
  • Add vanilla essence and mix well.
  • Now keep adding the flour mix little by little to the egg mix.
  • Mix them well with a spatula.
  • If mix is thick, add few drops of warm milk to make the flour egg mix thin.

BAKING PART:

  • Grease a 3 inch microwave safe bowl with butter and line it with a baking sheet.
  • Pour the flour egg mix to the bowl and level the top with a spatula.
  • Microwave the cake on high for about 3 mins.
  • To check whether the cake is cooked or not insert a knife and ensure it comes out clean without any stickiness when pulled out.
  • Now pre-heat the microwave oven up to 220 degree Celsius and put the cake for another 2 to 3 mins for the top of cake to get slightly browned.
  • Remove it from the microwave and let it cool for about 5 to 7 mins.
  • Dust some powdered sugar upon the cake if desired.
  • Decorate the cake as desired. Here I have used cherries.
