Coconut Sago Pudding By Indrani Bandyopadhyay

Ingredients:
- 2 x 400 ml cans coconut milk/cream
- 250 ml water
- 3/4 cup sago pearls
- sugar to taste
Method:
- Soak sago pearls in coconut milk/water mixture in a medium saucepan.
- Stand covered for 30 mins stirring occasionally.
- Then set mixture on stove for 5 mins + bring to boil stirring constantly.
- Reduce heat to low + simmer for 10 mins stirring occasionally.
- Stir in sugar to taste.
- Let stand for about 10 mins then pour into serving-ware.
- You can easily halve the ingredients to make less.
- Eat hot or cold, add any fruit you like.
