Easy-Peasy Microwave Banana Cake by Sanjana Banerjee

Bananas are known to be loaded with nutrients like potassium and sodium. Bengalis even use the raw variety! In fact, they use all parts of the banana tree (at least most!). Well, let’s get back to the fruit of the moment — Banana! From the fresh ones to the over-ripe ones, you can use any banana that you may have at home for this recipe. This means no need to throw out the over-ripe bananas (that no one was willing to eat)! Once prepared, amaze everyone with your “baking” skills. The secret will be ours that you used the microwave to get the same fluffy effect!

Ingredients

  1. Ripe/Over-ripe Bananas – 6
  2. Brown Sugar/White Sugar – 2 cups
  3. Softened, Unsalted Butter – 125gms
  4. All Purpose Flour/Maida/Self Rising Flour (Sifted) – 2 cups
  5. Eggs – 4
  6. Baking Powder – 2 teaspoon
  7. Vanilla Essence – 2 teaspoon
  8. Cashew Nuts (optional)
  9. Powdered Sugar for Decoration

 

Method:

  1. Start by greasing the bowl in which you will prepare the banana cake and leave it aside covered.
  2. Next mash the ripe bananas with a fork and keep aside.
  3. In a blender, add the sugar, eggs and butter. Blend it well, till a creamy and light mixture is formed.
  4. Pour this into a bowl and add vanilla essence, mashed bananas and cashew nuts to the blended mixture.
  5. Sift the flour and baking powder together to remove any lumps.
  6. Next, add the sifted flour mixture to the blended liquid mixture in the bowl and fold it in carefully with a spatula.
  7. Once the flour is folded in, pour it in the greased bowl and leave it aside for 15 minutes.
  8. After 15 minutes, cover the bowl and microwave at medium power for 10 minutes.
  9. After the 10 minutes, open the cover and microwave it for a further 10 minutes or till the cake is light, fluffy and cooked to the middle.
  10. Let it sit for another 5 minutes or till it cools down. Once cool, turn it out onto a plate.
  11. Sprinkle the top with the powdered sugar.
  12. Take a warm slice and serve it with one or two dollops of vanilla ice cream.
