Semai Payesh/ Vermicelli Pudding

Payesh is something that is made by Bengalis to celebrate auspicious occasions and for celebrating someone’s birthday. Since my childhood I have memories of waking up to the smell of payesh on my birthday. It is also known as Kheer among many but the quintessential Bengali dish is called Payesh. This milk sweet dish is usually made using rice, Gobindobhog rice to be particular. Other variations do exist. One variant is the payesh made with sooji (semolina/rawa). In this recipe we see Semai (vermicelli) being used. Try this easy Semai Payesh recipe to create a tasty sweet treat for your loved ones.

 

Ingredients:

  • Milk

  • green cardamom (crushed):

  • Sugar

  • Semai (vermicelli)

  • Cashew (chopped)

  • Raisins (soaked)

  • Almonds

Preparation

  • Boil the milk.

  • Add the cardamom.

  • Keep stirring to prevent from burning.

  • Add the sugar when milk starts to thicken and keep stirring

  • Now add the semai and reduce heat

  • Mix nicely and add the cashew and raisins

  • Keep stirring and cook for a little while

  • Take it off the flame and let cool before serving
