Treacle — Golden Syrup

 

Golden Syrup is a type of treacle that is pale in colour and has a rich and sweet taste. It is often confused with similar-looking syrup, honey. The golden syrup is smooth and luscious that can be drizzled over pies and cakes to enhance their taste. Golden syrup is found widely across the world but you can also make it at home. Here is the recipe for the delicious golden syrup.

 

Ingredients:

Initial Step Ingredients:

  • 1/2 a cup of white granulated sugar
  • 3 tablespoons of water

 

Final Step Ingredients:

  • Two and a third cups of white granulated sugar
  • Half slice of fresh lemon
  • One and a half cup of boiling water

 

Preparation:

  1. Put a pot on medium heat and add in the ingredients under ‘initial step ingredients’.
  2. Keep stirring till the sugar dissolves and starts to caramelize. (Be careful as the light caramel might turn dark quiet fast)
  3. When the caramel reaches a pale and light colour add in the boiling water but slowly as the mixture will splutter.
  4. Once water has been poured in, add in the lemon slice to stop the sugar from caramelizing.
  5. Finally add in the remaining sugar and continue to stir till the sugar dissolves completely.
  6. Turn the heat to medium or low and let it simmer for another 45 minutes. It should simmer gently and leave it untouched for this time.
  7. After 45 minutes, turn off the heat and let it cool down.
  8. Once cooled, strain it and pour the strained syrup into a sterilized jar for future use.

Note: Prepare the golden syrup at least a day before use so that it can stand in the jar for it to thicken up. It can be stored for a month or so if stored in a cool and dry place.
