Dim-er Borar Jhol /Egg fritters’ curry

  • Dim er borar jhol or egg fritters curry is perhaps the commonest and the go-to recipe. It is great to have it with rice and roti or paratha.  This was one of the first recipes I learnt and had stood me in good stead when I first came to the States and stayed there with my husband.     Ingredients:Eggs
    Ginger-Garlic Paste
    Turmeric Paste
    Cumin Seeds
    Cumin-Coriander Powder
    Garam Masala Powder
    salt-Sugar
    Tomatoes — chopped (You can use puree instead)
    Green Chillies
    Onions — chopped
    Red chilly powder
    salt-sugar
    pepper powder
    cilantro for garnishing
    Oil
    butter

    Preparation

  • In your blender, mix well eggs, cilantro ginger-garlic paste, pepper powder, salt-sugar, and cilantro bit of all other spices.
  • Grease your baking tray with butter and put the blended mixture.
  • Bake & when it hardens like cake, bring it out.
  • Cut into medium sized cubes.
  • In a pan, heat oil.
  • Add cumin seeds. When they splutter, add the chopped onion and ginger-garlic paste.
  • cook for a while. Add the tomatoes. cook again.
  • Then add all the other spices. Mix well.
  • Add the cilantro water. Let it boil.
  • Add the egg cubes.
  • Let them absorb the gravy a cilantro.
  •  Remove from heat.
  • Garnish with cilantro
