Mexican One Pan Complete Meal With Egg

When we were living abroad, and the days would all turn long and at times dreary, I would often cook this just to take away the monotony and also to have a simple one meal plan for dinner.

You too on days when you want to just have a meal in itself can try this.

 

Ingredients –

  • Onions
  • Garlic
  • Ginger
  • Parsley/ Coriander/Oregano
  • Tomatoes
  • Green Chilies
  • Capsicum/ Bell Peppers
  • Sausage
  • Mushroom
  • Shrimp

Preparation –

  • Take a flat base not-so-deep pan (preferably non-stick) with a medium-large surface area (depending on how many people you are cooking for).
  • Finely chop onion, garlic, ginger, parsley (or coriander, or oregano), tomatoes, green chillies (or jalepeno), capsicum/bell peppers.
  • Coarsely chop boiled chicken, cooked sausages, cooked mushroom, boiled shrimp (you can add all of them or leave out any. you can try leftovers). In a pan, add butter and saute all the stuff with butter, salt and pepper. Keep aside.
  • Heat the pan. Add oil. Heat. Add garlic. Then onion, ginger. Fry well. Add a pinch of sugar and kashmiri laal mirch powder (gives colour but doesn’t make it too spicy) or paprika.
  • Add salt (to taste). Add the herb, chillies, and capsicum. Fry well. Add the tomatoes.
  • Cook till the whole thing becomes like a coarse paste and the oil separates. Add the meat and the shrimp. Saute. Add a hint of water. Cook for a while stirring all the time.
  • With spatula make dents into the cooked stuff.
  • Carefully crack an egg into each depression (use fresh eggs since older eggs tend to have watery whites).
  • Grind black pepper on each egg. Top with grated cheese over the whole stuff.
  • Cover the pan. Put on low flame. Let the egg cook and the cheese melt. And it’s done. Cut like pizza (keeping the eggs intact, one egg for each person). Serve with soup, salad and dinner roll.
