Spicy Eggs

Spicy eggs are an extremely easy yet tasty recipe that is time saving and yet brings a delicious change from the regular meal cooked everyday. I have made my own small changes to the recipe I originally had learnt and adapted it to suit my own taste. Do drop in a line to tell me if you liked the same.

Ingredients:

Oil: 2 Tablespoons
Chopped Green Chilli: 1
Boiled Potato: 1
Eggs: 2 (Beaten)
Garlic Pulp: ½ Teaspoon
Chopped Onion: 1
Chopped Tomato: 1
Cumin Powder: ½ Teaspoon
Cooked Peas: 25 Gms
Salt and Pepper: To Taste
Some Coriander Leaves
Grated Cheese: 25 Gms

Preparation –

  • After heating oil in the frying pan, except for the cheese and eggs, add all the ingredients and keep frying till they are well blended (tomato and potato should still be firm).
  • Then add salt and pepper according to preferred taste.
  • Turn up the flame and add in the beaten eggs.
  • Now reduce the flame and cover the pan.
  • Continue to cook till the bottom layer of the egg mixture turns brown.
  • Remove the cover and sprinkle grated cheese on the top.
  • Finally place it under a hot grill (broiler) for the eggs to set and cheese to melt.

Tip: To differentiate between cooked and raw eggs in the shell, spin them. Cooked eggs spin evenly; raw eggs wobble.
