Enchor Chingri /Green Jack-fruit Curry with Shrimp

The traditional Bengali cuisine often replaces green jackfruit with meat, due to it’s similarity in texture. The vegetable is used for making rich curries redolent with ghee and garam masala. Adding shrimps to the curry enhances the flavour and gives it an even more delicious twist.

 

Ingredients:

  • Shrimp

  • Green jack-fruit

  • Potato

  • Tomato

  • Onion

  • Garlic

  • Ginger

  • Green chillies

  • Turmeric

  • Salt

  • Sugar

  • Bay leaf

  • Cinnamon

  • Cardamom

  • Cloves

  • Ghee

  • Dried red chilli (optional)
  • Garam Masala Powder/ Paste

 

Method:

  • Fry the clean shrimps with salt and turmeric and keep aside.

  • Clean and chop the green jack-fruit well.

  • Boil it in water with turmeric and salt.

  • When done, strain and keep aside.

  • Peel and chop the potatoes.

  • Now heat oil and temper with bay leaves, crushed cinnamon, cardamom and cloves. If you are using dried red chilli, add it now.

  • Then add onion, garlic and ginger paste.

  • Now fry the potatoes.

  • Add chopped tomatoes, and cook for a while.

  • Now add the following powdered spices — turmeric, salt and cumin.

  • Also add some green chilies (paste or slit ones).

  • Pour the green jack-fruit.

  • Stir well.

  • Add garam masala.

  • Cook for a while and then add some water (preferably warm).

  • Let the whole concoction cook properly.

  • There wouldn’t be too much of liquid in the gravy.

  • Mix in the shrimp.

  • Finally add a swirl of ghee.

  • Serve with steamed rice.
