Karola-Chingri / Bitter Gourd with Prawns

I learnt this recipe from my friend Tahiti, who can work wonders in kitchen with any ingredient you provide her with. Karola Chingri is a recipe that would help you feed bitter gourd to those who stay off it due to the bitterness. This recipe brings together an interesting amalgamation of vegetable, seafood, lentils and spices making it a nourishing dish.

 

Ingredients –

  • Bitter gourd -6
  • Chingri / prawns – 1 cup
  • Onions
  • Green chillies
  • Garlic paste
  • Salt
  • Turmeric
  • Chilli powder
  • Musur Dal/ Musur Lentil
  • Tomato
  • Coriander leaves

Preparation –

  • Cut the bitter gourd in rings and keep the prawns chopped or use small shrimps.
  • Take a frying pan. Keep the bitter gourd, the prawns, turmeric powder, chopped onions, green chillies, garlic paste in the pan.
  • Pour oil on top of this concoction, and add salt, turmeric and chilli powder.
  • Take a fistful of musur dal or lentils and add a little water (two fistful) to this.
  • Now put the pan on oven, turn on the heat and keep stirring. Keep the pan covered and heat low.
  • Once the vegetables and shrimp are done, add chopped tomato and coriander leaves.
  • Remove cover and stir well, and continue to cook and once a little dry, put off the oven.
  • Serve with hot rice.
