Korolla with chingri /bittermelon with shrimp

Bitter melon has a lot of health benefits and is a wonderful palate cleanser that is traditionally eaten at the beginning of Bengali meals to make the appetite ready for the main courses. Paired with shrimp, this simple recipe tastes great with plain steamed rice.This is a low oil recipe and can be made with oil as little as 1 teaspoon. This recipe is also a tasty item to serve to people suffering from diabetes.

Ingredients:

  • Bitter melon (about 6 pieces of the larger variety; sliced into small pieces)
  • Shrimps — 1 cup (marinated with salt and turmeric; steamed)
  • Onion (finely chopped)
  • Garlic (finely chopped)
  • green chillies
  • tomato chopped
  • turmeric powder
  • salt
  • mustard oil
  • cilantro (finely chopped)

Method:

  • Cut bitter melon into small pieces.

  • Wash well and leave aside for the water to drain out.

  • In a pan, add the bitter melon, steamed shrimp, onion-garlic, turmeric, salt and green chillies. Swirl in some mustard oil. Add very little water (about a third of a cup).

  • Cover the pan; and in low hear let the concoction cook.

  • When the vegetable is cooked well, remove lid and add the chopped tomatoes and cilantro.

  • With open lid let it cook for a while.

  • Remove from heat; and allow some standing time with the lid put back on.

  • Serve with hot steamed rice.
