Lau-Chingri/ Bottlegourd with Shrimps

‘Lau’ or Bottle Gourd offers an array of health benefits including promoting weight-loss and controlling blood-pressure. It is also extremely low in fat and cholesterol. This light recipe tastes very good with the addition of shrimps and is actually good for your health too.

Ingredients:

  • Bottle gourd

  • Shrimp

  • Cumin (whole)

  • Bay leaf

  • Cumin paste

  • Turmeric paste

  • Chilli paste

  • Salt

  • Sugar

Method:

  • Finely chop the bottle gourd

  • Heat oil in a pan

  • Temper with cumin seeds and bay leaf

  • Add the shrimps and fry

  • Add the cumin, turmeric and chilli paste and cook till oil separates

  • Now add the bottle gourd and sprinkle salt

  • Cover and cook in low heat

  • The bottle gourd should release enough water for cooking. If not, then add a little water

  • When the bottle gourd is fully cooked, add a little sugar

  • Add a couple of slit green chillies (optional) and take it off the flame

  • Serve in room temperature
