Pomphret roast

Pomphret roast is absolutely delicious. It can be served with boiled veggies and some greens to make a complete and healthy mealThe outside crunch provided by the oven roasting further enhanced by the salty coating of the cheese adds flavour when you bite through setting the stage for the fleshy part of the fish to tickle your palate. Best part, it requires very few common kitchen ingredients; and is absolutely easy to make.

 

Ingredients

  • Pomphret fish – whole
  • Salt
  • Onion- ginger- garlic paste
  • Chilli paste/ chilli powder
  • Coriander paste
  • Vinegar
  • Oil
  • Curd
  • Grated cheese (I grate Amul cheese cubes)
  • For garnish (optional) — cilantro, onion rings, chillies, lime or lemon slices, spring onions — anything that catches your fancy.

 

Preparation –

  • Wash the fish and pat it dry
  • Marinate it with Onion- ginger- garlic paste, salt, Chilli paste/ chilli powder, vinegar, coriander paste
  • Now add the curd and oil.
  • Let this be in marination for 2 hours.
  • Line baking tray with foil ( this saves you from scrubbing pan later)
  • Grease with a little oil brushed lightly.
  • Take the fish out of the marinade and place on the tray.
  • Now sprinkle grated cheese from top.
  • Heat oven to 400 degrees and roast it in the oven till the fish turns golden brown and a beautiful crust is formed.
