Tetor Daal

The very special preparation at each and every Bengali household is prepared during summers. But never mind everything spreads beyond boundaries, so whether you are a Bengali or not you can still make this refreshing preparation by just maintaining the following…
Ingredients:
• Moong Daal (not fried)
• Ginger paste
• Bitter gourd
• Salt and sugar to taste
• Mustard seeds
• Green Chilies
• Dried Red Chilies (Optional)
• Oil for cooking
• Turmeric Powder
• Bay leaves

Method:
• Cut and deseed the bitter gourds
• Wash them well and rub them with turmeric and salt-sugar.
• Lightly shallow fry and keep aside
• Wash the daal well and boil it with salt, green chilies and turmeric powder.
• When the Dal starts to boil, add the chopped bitter gourd
• Let it cook for a while
• When the vegetable softens, add the ginger paste and cook for a while.
• You can add sugar or just leave it out.
• In a different pan heat oil
• Temper it with mustard seeds and ginger paste. Let it splutter..
• When done, pour over the dal for tempering.
• Let it cool to room temperature.
• Serve with plain rice.
