Manghor Chorbir Baura/ Mutton-Fat Fritters
Mutton-fat fritters are essentially for those who are not counting carbs or calories or even cholesterol. These fritters made of mutton-fat are gooey, with an almost melt in your mouth interior enveloped in a crunchy exterior. The crunch comes from the rice flour batter; while the trick to keep the interior soft is to add all the ingredients in the form of paste (instead of say finely chopped version). This is a Sunday lunch favourite in my home — although allowed at the most about once a month — but would make a lovely snack on a rainy evening on a wintry afternoon.
Ingredients:
- Mutton Fat — about 250 to 300 gms will make about 10-15 fritters depending on the size.
- Lemon juice/ vinegar
- Turmeric powder or paste — half teaspoon
- The Paste — fine paste of ginger-garlic-onion-green chillies made together — about 2-3 teaspoons in all.
- Salt to taste
- Rice flour for batter
- Water for batter
- Oil for frying
Method:
- Add to the fat salt, turmeric, lemon juice/vinegar and keep aside for about 20-30 minutes
- Now add the paste to it and mix in well.
- Make a batter with rice flour and water. To it add some salt for taste. But remember the mutton-fat also has salt added — so adjust quantity accordingly.
- Heat oil in a pan and let it smoke. Reduce heat.
- Take a little bit of the fat mixture, lightly coat with the batter and add to the oil.
- Fry till golden brown on both sides.
- Serve immediately.
