Moroccan Chicken Kebabs

Kebabs are quiet a popular dish in India and across the world. This dish is a zesty recipe from the land of couscous, Morocco. This kebab recipe can also be made with Turkey but the recipe below is made with chicken. Saffron enhances the flavour but it is an optional ingredient. A salad and the traditional pita bread can be served with the kebabs. The kebab can be served on the skewers as an appetizer or as a part of a full course meal. You could also use it as a sandwich filling. Treat your family and friends with this kebab and become popular.

 

Ingredients:

  • Boneless chicken breast cut into small cubes or bite sized chunks
  • Olive Oil/ Vegetable Oil

    For marinade:

  • Salt
  • Paprika or Kashmiri chilli powder
  • White pepper powder
  • Fresh ginger paste
  • Saffron (optional)
  • Fresh garlic paste
  • Chopped parsley leaves
  • Lemon juice
  • Olive oil or Vegetable Oil
  • For Salad:

You can prepare the salad with your choice of ingredients but a tomato and roasted pepper salad would be amazing with this dish. Ingredients for the roasted pepper salad are:

  • Ripe tomatoes peeled and chopped after deseeding
  • Roasted green peppers peeled and chopped
  • Finely chopped garlic (optional)
  • Preserved lemon peel chopped (optional)
  • Cumin (optional)
  • Vinegar
  • Vegetable or Olive Oil
  • Finely chopped Parsley leaves
  • Pepper and salt according to taste

 

  • Method of Preparation:
  1. Marinate the chicken pieces with salt, paprika, white pepper powder, ginger paste, saffron, garlic paste, chopped parsley leaves, lemon juice and oil. Let the chicken pieces marinate overnight in the fridge. (If paprika is not available, Kashmiri chilli powder can also be used.)
  2. Next day take it out of fridge to bring it to room temperature and transfer the chicken pieces to skewers.
  3. Prepare the grill by heating and brushing it with oil. Next place the chicken skewers on the grill and turn them over every 4 to 5 minutes.
  4. Once it is cooked properly serve the Chicken Kebab skewers with salad.

    If you want to prepare the Tomato and roasted pepper salad then follow these steps of preparation:

  • In a mixing bowl add tomatoes and the roasted green peppers along with that add the preserved lemon, garlic and parsley. (if you do not plan to serve it immediately, refrigerate the mixture)
  • When ready to serve, bring it out of the refrigerator and lower it to room temperature. Then add the salt, pepper, vinegar, oil and cumin.
  • Toss or stir all the ingredients gently and serve immediately with the kebabs.
