Noodle Omelette

Most of us a packet of noodles in the pantry and some eggs in the fridge. Noodle omlette can easily be whipped up with common ingredients that are lying in your kitchen. This is a healthy and filling recipe that can be served as breakfast or a quick snack. The best part is that it can be made in a jiffy.

Ingredients:

  • Noodles
  • Egg
  • Tomato
  • Capsicum
  • Onion
  • Coriander leaves (optional)
  • Green chillies (optional)
  • Salt
  • Pepper powder
  • White oil

Preparation:

  • Break the noodles into very small pieces
  • Boil them well till soft (add a little salt when boiling)
  • Mash the boiled noodles smoothly
  • In a separate bowl, break eggs and beat with salt and pepper
  • Add chopped tomatoes, onion, capsicum and the mashed noodles into the egg
  • Beat well again to make a thick batter
  • Heat oil in a frying pan and fry the batter like an omelette
  • You can add chopped coriander leaves and green chillies as per taste
  • Serve hot with sauce
