Savoury Bread Pudding By Tanushree Nandan

Whether you want it as brunch, breakfast or dinner, the savoury bread pudding would come to your rescue.

Ingredients:

  • 4 slices of stale bread
  • 250 ml milk
  • 3 eggs
  • Chopped vegetables of your choice: approx 250 gms (I used onions, carrots and green capsicum)
  • 4 cloves of garlic, finely chopped
  • Butter or olive / canola oil: 1-2 tablespoons
  • Salt, pepper to taste.
  • Optional: 200 gms paneer, finely chopped or mashed Grated lemon or orange zest: one tablespoon Grated nutmeg (jaiphal): half teaspoon. Other powdered spices or herbs, if you want to add them. Anything goes, really.
  • Grated cheese to taste

 

Preparation:

  • In a shallow bowl (or in the baking tray, only if you’re using a glass one), break the eggs, and pour in the milk. Whisk well.
  • Break the bread slices up into smaller chunks, and soak them in the egg-milk mixture. Let it soak in the fridge (not the deep freezer) for about 2 hours.
  • Meanwhile, in a kadhai, heat the butter / oil on medium heat, add the onions, garlic and then the other chopped vegetables. Sauté for a while, till the veggies start to soften.
  • Add the salt, pepper and other spices, if you’re using any, and cook for a few minutes more, till the spices are fragrant.
  • If using paneer, add it to the cooked mixture now, stir well and incorporate.
  • Take the veggies off the heat and let it cool down. Remember, your veggies need not be fully cooked.
  • Now, preheat your oven to 200C.
  • Take the bread mixture out of the fridge, mash it well, then add the cooked veggies to the mixture.
  • Add the lemon / orange zest and nutmeg. Mix well.
  • Pour it into an oiled baking bowl or tray. Stick the bowl / tray into the oven, and bake at 200C for 40-45 minutes, till the top is fully browned and the middle is set.
  • Sprinkle the grated cheese on top of the pudding, and bake it for 5-10 mins more, just to melt the cheese.
  • When done, leave it to rest for 15 minutes before slicing and serving.
