Shashlik

 

Shashlik is a delicious meat dish from the Middle Eastern cuisine. It is also popular in various parts of Europe. The dish is prepared by grilling skewers of meat. The recipe originally was made with lamb meat but mutton and chicken shashlik have also gained popularity. Marinating the meat pieces for a long time enhances the flavour of the dish. You can alternate the meat pieces with onions, bell peppers or tomatoes. It is best served with rice with some gravy and salad. You could serve it with salad and a good yoghurt dip. Whichever way you serve it, one thing is for sure, all your friends and family will love these grilled meat skewers.

 

Ingredients

  • Lamb or mutton pieces
  • Lemon juice
  • Black pepper powder
  • Olive oil or White oil
  • Kashmiri red chilli powder
  • Salt
  • Grated raw papaya
  • Wooden or metal skewer
  • Diced Onion flakes
  • Diced Bell Pepper flakes
  • Diced tomato pieces/cherry tomatoes

Preparation

  1. Marinate the meat pieces with lemon juice, black pepper powder, olive oil or white oil, Kashmiri red chilli powder, salt, grated raw papaya.
  2. Leave the meat marinated in the fridge for 12 hours minimum. After taking it out of the fridge make sure that you bring the marinated meat to room temperature before moving forward.
  3. Once it comes up to room temperature, place the meat pieces on the skewer.
  4. Alternate each piece with an onion, bell pepper and tomato. The order should be – Meat, onion, meat, bell pepper, meat and tomato. Continue till the full skewer is filled up. (The order of filling the skewer can be different according to your choice)
  5. Place the skewers on the grill after brushing with oil.
  6. Keep rotating the skewers every 5 to 6 minutes till the meat is cooked completely but be careful to not overcook them.
  7. Once cooked serve the delicious shashlik skewers with a dip or salad of your choice.

 

Tips:

  • The meat might have a little bit of fat
  • Instead of grated raw papaya you could use meat tenderizing powder
  • Meat from shoulder or leg area is preferred for the dish
  • The same recipe can be followed for chicken shashliks just omit the raw papaya, and time for marinating chicken pieces can be reduced.
