Shojne phool er baura/drumstick blossom fritters

Sojne phool, or drumstick blossoms, is an unusual yet delicious ingredient for Bengali cooking. Fritters made with this taste crisp and yummy with steamed rice, and serves as a wonderful snack also.

Ingredients:

  • Sojne phool/Drumstick blossoms (you can use them whole or chop them fine)
  • Refined flour/maida
  • Corn flour
  • Rice flour
  • Turmeric powder
  • Red chilli powder
  • Poppy seeds
  • Oil (mustard or refined oil)
  • Salt
  • Sugar

Preparation:

  • Clean the drumstick blossoms by throwing away the stem inside the flowers.
  • Wash the blossoms and drain completely to dry.
  • Mix equal quantities of maida, corn flour and rice flour in a bowl.
  • Add salt, sugar, a pinch of turmeric powder, red chilli powder, poppy seeds and 2 tbsp of hot oil.
  • Add sufficient water to make a smooth paste.
  • Heat oil in a karahi (wok).
  • Coat the blossoms in the paste and deep fry.
  • Drain excess oil and serve.
