Achari Goshth (Mutton or Chicken)
As the name itself suggests, Achari Gosht is a meat recipe that shall bring to your palate a zesty tang. We all have days when we crave for something spicy; or days when we wrack our brains for one special recipe that shall bring an instant smile from your family; or when you look for easy yet sure ways to impress guests. This recipe shall definitely be helpful then. Goshth typically refers to meat of a goat, but you can use any meat of your choice and get equally enticing results.
Ingredients-
- Goat meat- 500g (cut in cubes)
- onion (medium-sized)- 3 (made into paste)
- Garlic- 6 cloves
- Ginger- 1 inch
- Tomato (medium-sized)- 2 (chopped)
- Chopped coriander- 2 tbsp
- whole Red chilly- 4
- Mustard seeds- 1tsp
- Fenugreek seeds- 1/3 tsp
- Cumin seeds- 1/2 tsp
- Fennel seeds- 1/2 tsp
- Onion seeds (kalojire)- 1/2 tsp
- Cloves- 3
- Any cooking oil (preferably mustard oil)- 1/3 cup
- Turmeric powder
- Chilli powder
- Salt to taste
- Lemon juice 1 tbsp
- Cooking Oil
Preparation:
- Make a paste of ginger and garlic.
- Dry roast whole red chilli, mustard seed, cumin, fenugreek, fennel, onion seeds and cloves together and grind to powder
- Heat oil in a wok
- Add onion paste and fry in low heat
- Now add ginger-garlic paste and keep frying
- Add the powdered spices and fry for another minute
- Add the meat
- Turn heat in high and keep frying while stirring continuously so that the meat or the spices do not get burnt
- When meat turns brown, add turmeric, chilli powder and salt
- Keep frying till oil is released
- Now add 1 and 1/2 cup of hot water
- Bring to a boil and cover (you can pressure-cook if you want)
- Lower the flame after 2/3 whistles
- Turn gas off after 15 minutes
- Uncover when pressure has been released and add chopped tomatoes
- Cook for another 10 minutes in low heat to reduce gravy
- Add lemon juice and chopped coriander leaves
- Give it a stir and remove from heat
Allow some standing time and serve
