Afghani chicken by Sohini & Abhrajit

This rich and fragrant chicken tastes great with roti or parathas. The recipe is from Sohini and Abhrajit’s kitchen. Sohini Chatterjee is a teacher and Abhrajit is an Engineer.

Ingredients:

  • Chicken

  • Onion paste

  • Ginger paste

  • Garlic paste

  • Chilli powder

  • Coriander powder

  • Clove

  • Cardamom powder

  • Yogurt

  • Oil

  • Ghee

  • Salt (to taste)

Method:

  • Marinate the chicken overnight with onion, garlic paste and salt.

  • Heat oil in a wok.

  • Add onion, garlic, chilli powder

  • Add the chicken next

  • Keep frying in medium heat till oil starts separating from the masala

  • Add salt, coriander powder and ginger paste and keep cooking.

  • Now add the whole cloves and cardamom powder

  • Cook for a while, stirring frequently

  • Beat the yogurt and add it next

  • Mix well and cook till the chicken is done

  • Add ghee if using and serve
