Chicken peanut butter stew

This is an African recipe that tastes great with the kick of pepper and jalepenos and the nutty flavour of peanut butter. Serve this with Steamed Rice and enjoy with your family.

Ingredients:

  • 1 to 2 tablespoon of olive or canola oil
  • 1/4 cup of finely diced red onion or a regular onion
  • 1 tablespoon of finely minced fresh ginger
  • 2 teaspoons of finely minced jalapeno ( pickled Jalapenos can also be used)
  • salt according to taste
  • 1 teaspoon of chilli powder
  • 1 cup of chicken stock
  • 1/2 a cup of chunky peanut butter
  • 2 tablespoon of tomato paste
  • 1 tablespoon of cider vinegar
  • 3 cups of cooked chicken that has been diced
  • freshly ground black pepper according to taste
  • 3-4 green onions (scallions) that has been thinly sliced

Method:

  • Add the finely diced onion, jalapenos and ginger to heated oil in a heavy pan
  • Sauté for about 2 minutes after seasoning with salt.
  • Sauté for another 1 minute after adding the chilli powder.
  • Next pour in the chicken stock and add in peanut butter, tomato paste as well as the apple cider vinegar.
  • Bring to a boil while continuing to stir and lower the heat once it starts to boil so it can simmer gently.
  • Now add the diced chicken and combine by gently stirring. Let this simmer for about 10 to 15 minutes.
  • Do not stir too frequently otherwise the chicken pieces might fall apart.
  • Wash the sliced green onions and dry it.
  • Once the oil separates from the peanut butter gently stir and serve hot using green sliced onions as a garnish for each serving.
