Cumin-Dusted Pork Cutlets With Citrus Pan Sauce

Cumin or Jeera is a staple in various Indian recipes; here we see it being used for a continental dish. Pork chops are a versatile cut of meat, that can be grilled, oven baked or as is in this case, pan-fried. One thing for certain is the fact that the pork chops will taste delicious. Coating the pork chops with the cumin flavoured flour is a great way of incorporating the earthy flavour of cumin into the dish. The addition of the citrus sauce along with the pan juices from the pan-fried pork chop just adds another layer of flavour that just enhances the overall taste of the dish.

 

Ingredients:

* 2 tbsps of all-purpose flour
* 2 tsps of ground cumin
* half a teaspoon of salt
* half a teaspoon of ground black pepper
* 4 pieces of pork cutlets that should come to a total of about 12 ounces in weight
* 3 tbsps of olive oil
* 2 cloves of garlic that have been minced
* 1/4 cup of fresh orange juice
* 3 tbsps of fresh lemon juice
* A few wedges of orange

Preparations –

  • Mix the first four ingredients (all-purpose flour, ground cumin, salt and ground black pepper) on plate to create seasoned flour.
  • Use the seasoned flour to coat the pork pieces and shake off the excess flour coating.
  • In a large nonstick skillet heat some oil over a medium heat.
  • Add pork to the heated oil and sauté till the pork is cooked thoroughly (about 3 minutes on each side).
  • Transfer to two plates.
  • Add two tablespoons of oil to the skillet and heat it up then add garlic to it and sauté for about 10 seconds (till they become golden).
  • Add lemon juice and orange juice.
  • Boil the mixture till it slightly thickens while continuing to whisk it occasionally for about 30 seconds.
  • Season the sauce with salt and pepper and pour it over the flour coated sautéed pork pieces.
  • Garnish using the orange wedges and serve.
