Kerala Roast Chicken by Anupriya DuttaGupta

This is an amazing recipe from a multifaceted person – Anupriya. Ingredients:

500gm chicken

For marination:

1/4th teaspoon of turmeric powder

1/4th teaspoon of chilli powder

1/4th teaspoon of coriander powder

1 teaspoon of vinegar or lemon juice

½ tsp ginger paste

½ garlic paste

2 green chillies – cut into small pieces

Salt according to taste

For roasting:

2 onions, small or medium in size

A large tomato that has been pureed after blanching and removal of skin

2 slit green chillies

2 sprigs of fresh curry leaves

1/4th teaspoon of garam masala powder

1/4th teaspoon of pepper powder

½ a lemon’s juice

Vegetable oil

Process:

  • Clean chicken and cut into medium pieces
  • Mix cleaned chicken pieces with all the ingredients mentioned under marination and marinate for about an hour or two.
  • Cut the onions into thin slices.
  • Heat 2 tbsp vegetable oil and fry onion pieces. Drain and keep the fried onions aside.
  • Using the same oil fry the chicken pieces. Don’t fry them till they are brown or crisp. Make sure they are cooked on the inside by covering the pan. Drain and keep them aside.
  • If the oil has chicken residues, strain it and clear any unwanted elements. In that oil, add the slit green chillies & curry leaves, then sauté for a minute.
  • Add tomato puree and sauté for about a minute.
  • Add the marinated chicken pieces and make sure you coat them well in the tomato paste.
  • Roast the chicken on medium flame till the preparation is almost dry.
  • Sprinkle in garam masala powder and pepper powder and mix it well with the chicken.
  • Add in the lemon juice, mix well and check taste and add salt is required.
  • Lastly, add in the fried onions and continue to mix well so that everything is mixed in properly and the ingredients can come together to excite your taste buds.
  • Serve Kerala Chicken Roast hot with roti, parathas or jeera rice!
