Niramish Mangsho or Vegetarian Mutton (sans Onion-Garlic) by Pritha Dutta

Puja and Prasad to most people are associated with vegetarian food. But in Bengal certain forms of worship entails offering meat to the Deity. I, for one, have witnessed prasad from Kalighat coming home, having meat as a part of the offerings. As a ritual, that meat is cooked without onion and garlic. This recipe has always intrigued me. Thanks to Pritha Dutta for sharing the same. Try it, without any hesitation in mind; you shall be amazed by the taste, flavours and aroma.

Ingredients:

  • Mutton
  • Ginger Paste
  • Cumin Paste/Powder
  • Coriander Paste/Powder
  • Turmeric Paste/Powder
  • Red Chilli Paste/Powder
  • Ghee
  • Bay Leaves
  • Black Cardamom
  • Red Chillies
  • Cinnamon Sticks
  • Curd
  • Salt
  • Freshly chopped Coriander Greens

Method:

  • Heat Ghee in a pan.
  • Temper the Ghee with Bay Leaves, Black Cardamom, Red Chillies and roughly broken Cinnamon Sticks.
  • Add the mutton, and fry on high flame for 5 minutes.
  • Then add the ginger, and all the spices — Ginger, Cumin, Coriander, Turmeric and Red Chilli Pastes.
  • At this stage also add the curd, salt to taste.
  • Slow  cook till the mutton turns tender.
  • Garnish with freshly chopped Coriander Greens and Serve.
