Orange Chicken
My friend Moumita Kumar is always looking for less spicy, less pungent yet flavourful and tasty dishes for her son, Ansh. Last time we met, I told her about Orange Chicken, especially this is the season when Oranges are freshly and abundantly available in the market. For her to remember the recipe, she wanted me to write it for her; and when I am writing a recipe, how can I miss sharing it with my BitebyByte peeps!?!
Ingredients:
- Chicken — preferably boneless
- Vinegar
- Salt
- White Oil/ Olive Oil
- White Sesame Seeds – 2 dinner spoons
- Finely chopped garlic
- Roughly chopped onions
- Fish Sauce — 1 dinner spoon
- Soya Sauce
- Orange Juice
- Honey (Optional)
- Slit Green Chillies
Note: For about 200-250 grams of chicken, use juice from about 5/6 oranges. Orange Juice : Soya Sauce = 3:1
Method:
- Marinate the chicken with vinegar and very little salt and keep for about 30 mins (Be careful about the salt, since the sauces have salt)
- Roast the sesame seeds and keep aside
- Heat Oil in a wok
- Add finely chopped garlic and fry till brown
- Add fish sauce; and when you get a nice aroma (about a minute), add the sliced onions and fry
- Add slit green chillies
- Remove the chicken from the marinade and add to the wok
- Once browned, add the juice and soya sauce. If you want to add honey, in a bowl mix in orange juice, soya sauce and honey together, and add to the cooking.
- Cook for a while
- Add the sesame seeds and toss for a while
- Remove from heat and serve with garlic bread/ fried rice/ noodles/ pasta.
