PaNthar Mangsher Jhol/ Mutton in a Runny Gravy

This is a home style Bengali recipe for those who’ve just started culinary experiments. It is an absolute must for all Sunday lunches. Serve it with piping hot steamed rice and follow up the meal with a nap – well, these are blissful experiences Sundays should be made up of.

 

 

Ingredients –

  • Mutton
  • Salt
  • Onion- ginger- garlic paste
  • Turmeric powder
  • Chili powder
  • Oil
  • Vinegar
  • Potato
  • Garam Masala (taken whole and then crushed coarsely)
  • Tomato
  • Ghee

 

Preparation –

  • Marinate the mutton with salt, ginger-garlic & onion paste, chili powder, turmeric powder and vinegar.
  • Peel and cut the potatoes in halves
  • Rub salt on the potatoes and fry them in oil. Keep aside
  • Now heat oil in a pan and temper it with garam masala, chopped onions.
  • Now add the marinated mutton
  • Add a little sugar
  • Keep stirring else the bottom will start to get burnt
  • Add chopped tomato
  • Once the mutton is sautéed well, add lukewarm water
  • Cook the meat covered (you may also pressure cook)
  • When the meat is nearly done, remove lid and add the fried potatoes
  • Keep stirring
  • Once mutton and potatoes all are done well, stir in garam masala paste and ghee.
  • Simmer for a little while and remove from heat to serve.
