Chicken Biryani by Nisupta Bhattacharya

Ingredients
- Basmati Rice
- Dhaniya / Coriander Powder
- Salt
- Green chillies
- Pudina Powder/ Mint powder
- Oil
- Ghee
- garam masalas ( shahjeera or black cumin seeds; jaiphal or nutmeg; tej pata or bay leaf; lavang or clove; elachi or cardamom & dalchini or cinammon)
- Chopped Onions
- Ginger paste
- Garlic paste
- Chicken pieces
- Kewra water
Preparation
- Wash bhasmati rice well.
- Mix dhaniya powder; salt; finely chopped green chillies; pudina patta.
- Mix everything well & leave for an hour or two.
- Meanwhile in a frying pan add oil with ghee.
- I used unrefined sunflower with home made ghee for the flavour.
- Add all whole garam masalas ( shahjeera; jaiphal; tej pata; lavang; elachi & dalchini).
- Add chopped onions. Once the onions are brown add ginger paste & chopped garlic.
- Then add chicken pieces as per your choice of size.
- Add salt; dhaniya powder & mix leave.
- Cover & leave to cook.
- Once chicken is cooked add rice & saute well.
- After which add water & leave it to boil.
- Once rice is cooked.
- Add lots of dhaniya. Fresh ghee & little kewra water
- Mix well. Serve hot with raita.
