Cooked Beans and Rice

Cooked Beans and Rice is a hearty and wholesome recipe that can be cooked in a hurry and tastes great in itself with a simple accompaniment of salad or salsa. Kidney beans are known to have good amount of fibre and various kinds of minerals. They are known to help control and combat cholesterol and blood sugar levels. Kidney beans are known to be very popular in diets of people who are on a weight loss journey.

Ingredients:

  •  Cooked kidney beans (you may even use canned version after draining properly the liquid)

  • Rice,

  • Oil

  • Chopped onion

  • Chopped Garlic

  • Chopped tomato

  • salt/ Sugar as per taste

Method:

  • Cook rice or you can always use leftover rice from previous day.

  • Heat oil in a heavy bottom pan. Once the oil is hot add chopped onion and chopped garlic.

  • Let them cook for sometime and then add the tomato.

  • Once they have cooked add the drained beans and cook for sometime.

  • Once the beans have mixed well with the onions/garlic and tomatoes, add some salt and a pinch of sugar and mix it well.

  • Then add the cooked rice and garnish with chopped cilantro or spring onions. Serve hot with some salad or salsa
