Mutton Biriyani made in oven

This recipe was shared by a friend long time back. This has been tried, tested and tasted many times since and it has always stood the test of time and passed with flying colours.

Ingredients

  • Rice- 5 cups
  • Mutton- 1 kg
  • Fried onion-1 cup
  • yogurt- 6 Tablespoon
  • cilantro
  • pudina (mint leaves)
  • tomato- 1 chopped
  • vegetable Oil- 1 cup (heat it up and then cool it down)
  • ginger- 2tsp
  • garlic-2tsp
  • butter
  • milk
  • kesar (saffron)
  • lime juice
  • rose essence
  • cashews (optional)

Dry Masala ( Dry grind these)

  • Elaichi (Green cardamom)-15
  • cook elaichi (cardamom)-1
  • Dalchini (cinnamon)- 8″
  • cloves-10
  • Nutmeg-1
  • Mace- 1tsp
  • Shahi jeera (black cumin)- 2 Table spoon

Preparation

  • Marinate the mutton with salt and ginger garlic paste, leave it for 2 hrs and then add the dry masala, chopped tomato, cilantro, pudina, yogurt and crushed fried onion
  • Leave it to marinate overnight
  • Cook rice by adding salt, cilantro, butter, shahi jeera whole (1 tsp), some elaichi and dalchini and cloves (cook rice in ur own way like using a pressure, cooker, rice cooker, or seiving through the starch but do add all the above mentioned stuffs and see that the rice is just a pinch away from not done, so cool down the rice as soon as possible)
  • Take a covered metal vessel, grease the vessel with butter generously.
  • Spread the mutton at the bottom and then add the cooked rice on the top.
  • Sprinkle kesar and milk(1/2cup) lime juice, and rose esence on the top.
  • Bake at 350F for 1hr- 1hr10min
  • You can also add roasted cashews on the top
  • Check after 40min and turn it a bit and again cover for the rest of the time
