Chicken Coriander Soup

Chicken Coriander soup is an extremely tasty and easy to prepare recipe. In general soups are always easy on the digestion and with a bread roll on the side can make a meal for itself. There are also lot of time when one can add a bit of noodles in the soup which then becomes a meal in itself. I generally make the Chicken Coriander Soup when I am in need of some hot and savoury soup and also on days when I am down! This can be a great pick me up and can be had for breakfasts, lunches and dinners.

Serves – This is for 6 bowls of soup.

Ingredients –

• 8 bowls of water
• 500 gms of minced chicken
• 2 teaspoons of finely chopped ginger
• salt to taste
• Butter

Procedure

• In a pot take 8 bowls of water
• Put 500 gms of minced chicken to boil by adding about 2 teaspoons of finely chopped ginger and salt to taste. You could also use shredded chicken. But I used mined version.
• Once the chicken stock is done, the chicken is boiled, and the water gets reduced a little, strain the chicken.
• Keep aside the stock.
• Now in a pan, add the chicken.
• Turn on heat and add butter.
• Brown the chicken.
• Add a little bit of pepper.
• Keep stirring and when it is done, add the stock and a medium bowl full of chopped fresh coriander leaves.
• Let it boil for a while.
• Remove from heat. Add juice from one lemon.
• Serve piping hot with garlic bread.
