Peas soup
Serves around 4 to 6 individuals
Ingredients
- 1 tablespoon white oil or olive oil
- 2 large onions, chopped
- salt to taste
- dried split green peas (about 2 cups) — rinsed well
- About 5 cups of water
- juice of 1/2 lemon (don’t discard the zest)
- smoked paprika – as per taste
Preparation-
- Heat a heavy bottom pot over medium heat.
- Add oil.
- Add the onions along with salt and cook for a couple of minutes.
- Add in the peas and water.
- Bring it to a boil and turn the heat down.
- Let it simmer for about 20 minutes till the peas become soft but are cooked well.
- Pour half of the soup in to a bowl and keep aside.
- Blend and puree the remaining soup in the big pot.
- Now Add the chunky soup that you had kept aside to the pureed soup.
- Give everything a gentle stir to mix well. This would give you the perfect texture.
- Add lemon juice and mix it well. Taste and season it according to your requirement.
- Serve in cups or bowls
- While serving, Drizzle each serving with olive oil, sprinkle paprika to taste and garnish with the lemon zest you had kept aside.
