Watermelon Gazpacho by Trina Mukherjee
A perfect simple summer relish — Watermelon gazpacho! Gazpacho is popular cold soup made with blending raw veggies. This dish is a classic dish eaten in Spain or Portugal. The cold soup is refreshing and cooling to the system and is perfect for summer.

Ingredients:
- watermelon (about half)
- half a red bell pepper
- 1 cucumber
- 4-5 garlic cloves
- One soaked bread slice
- sherry vinegar one tbsp ( alternatively, I used balsamic and apple vinegar 1 tsp)
- olive oil (extra virgin)
- toasted crushed almond
- chopped coriander or cilantro
- crumble of cheese (optional)
Method:
- Dice about half a watermelon, half a red bell pepper, 1 cucumber, 4-5 garlic cloves.
- Along with those, add one soaked bread slice, sherry vinegar one tbsp ( alternatively, I used balsamic and apple vinegar 1 tsp) , olive oil (extra virgin).
- Put it all into a mixer and make a puree.
- Put in the freezer. You can also keep it over night to chill it.
- When it is time to serve, drizzle some extra virgin olive oil.
- Garnish with toasted crushed almond and chopped coriander or cilantro, and some crumble of cheese (optional).
- Serve cold.
