Aloor Chatpata Tarkari/ Tangy Potato Curry

Potato or Aloo being a versatile vegetable can be paired with anything and everything. Potato curries/tarkari can be a great accompaniment with kochuri, luchi, parathas and puri. Here is one such curry recipe that can be prepared in a-jiffy and goes well with any kind of flatbreads. My favourite is to pair it up with Asafoetida kachoris, but you can also pair it with plain poori or parathas. The tang and zest that this recipe provides will keep you licking your fingers.

Ingredients:

  • Potatoes
  • Fenugreek seeds
  • Dry red chilli
  • Turmeric powder
  • Chilli powder
  • Coriander powder
  • Asafoetida
  • Salt
  • Sugar
  • Oil

Preparation:

  • Boil whole potatoes and let cool
  • Cut them in chunky pieces
  • Heat a little oil in a wok (I prefer just 1 or 2 tsp of mustard oil)
  • Temper with fenugreek seeds and a dry red chilli
  • Add a little water mixed with turmeric, chilli and coriander powder and sauté the masala
  • Now add 1/2 cup water and the potatoes
  • Add salt to taste, a little sugar and a pinch of asafoetida
  • Stir constantly
  • When the water is evaporated and the dish becomes semi-dry, take it off heat
  • Serve hot
  • Note: I like my dishes spicy so I add a little green chilli paste to this recipe. You can do it too as per taste
  • You may garnish with green chillies or dried red chillies
