Baingan Bharta (not the kind made with roasted brinjals)
Baigan ka bharta, hmm yummy and delicious, but wait a second, this recipe does not need you to roast the brinjals. It is a variation, which (just like the traditional recipe) can be the perfect accompaniment to roti or chapatis. The fact that the recipe requires, little to minimal oil, makes it a healthy version of biagan bharta. The tomato puree adds a zing to the overall flavour. Want to impress your family, surprise them with this recipe and hear pin-drop-silence at the dining table, as they enjoy this dish.
Ingredients –
- Brinjal/ Baingan
- Garlic
- Onions
- Green chilies
- Cumin & coriander seeds
- Salt & Sugar to taste
- Turmeric & Cumin powder
- Tomato
- Tomato Puree
- Coriander Leaves
Preparation
- Peel the brinjals
- Cut them into pieces
- Heat oil in a pan and fry almost 6 pods of chopped garlic
- Once it gives out a good smell, add the chopped onions and slit green chilies
- Add a pinch of cumin and coriander seeds
- Now add the cubed brinjals
- Add the chopped tomatoes
- Add salt, sugar, cumin, coriander & chili powder
- If it becomes too dry, keep adding some water
- For colour, I generally add a dash of tomato sauce/ketchup
- Once the brinjal has taken the consistency of a paste, check for salt & sugar and remove from heat.
- Add tomato and coriander leaves for garnishing (if you wish)
- Serve with rice or roti
