Baingan Bharta (not the kind made with roasted brinjals)

Baigan ka bharta, hmm yummy and delicious, but wait a second, this recipe does not need you to roast the brinjals. It is a variation, which (just like the traditional recipe) can be the perfect accompaniment to roti or chapatis. The fact that the recipe requires, little to minimal oil, makes it a healthy version of biagan bharta. The tomato puree adds a zing to the overall flavour. Want to impress your family, surprise them with this recipe and hear pin-drop-silence at the dining table, as they enjoy this dish.

  • Now add the cubed brinjals
  • Add the chopped tomatoes
  • Add salt, sugar, cumin, coriander & chili powder
  • If it becomes too dry, keep adding some water
  • For colour, I generally add a dash of tomato sauce/ketchup
  • Once the brinjal has taken the consistency of a paste, check for salt & sugar and remove from heat.
