Baked vegetables in white sauce with cheese topping

Baked vegetables in white sauce is an easy recipe that tastes delicious as a complete meal accompanied by dinner rolls, or as a side to roast or grilled chicken or fish. Your otherwise picky kids who don’t want any vegetables in their plates, will also enjoy the yummy cheesy taste of this dish. Any leftovers serve as a great filling for sandwiches for your family’s lunchbox.

Ingredients:

  • Mixed vegetables like cauliflower, carrot, beans (cut into small pieces), peas
  • Cheese (grated)
  • Butter
  • Flour
  • Milk
  • Salt
  • Black Pepper powder
  • Sugar

Preparation:

  • Shell peas
  • Chop the other vegetables into small pieces
  • Grate cheese
  • Boil the veggies lightly (add a little salt and sugar while boiling) and blanch immediately to keep the colour and texture of the veggies intact.
  • To make the white sauce, heat butter in a pan.
  • Add a little flour and stir continuously till the uncooked smell is gone from the flour
  • Now slowly start adding the milk while stirring constantly to prevent lumps from forming
  • When the milk is nicely mixed with the flour, add cheese, salt and pepper-powder
  • Bring to a boil and take the mixture off flame.
  • When it cools down a little, mix the boiled vegetables
  • Grease a baking pan with butter and pour in the mixture
  • Add grated cheese on top
  • Bake till the cheese melts
  • Serve with dinner rolls.
