Begun, Daler Bori diye Paalong Shaaak/ Fresh Spinach stir fried with brinjals & dried lentil dumplings

Come winters, the local vegetable market gets flooded with a variety of fresh greens; and naturally all of them make way to our kitchen regularly. Naturally we have to keep altering the methods of cooking to avoid monotony. This stir fry with fresh spinach retains the nutrients of the greens since this can be cooked with about two teaspoons of oil and very minimal spices. The best deal is that it tastes awesome with piping hot steamed rice.

 

Ingredients –

  • Begun/ Brinjal
  • Fresh Spinach
  • Kalo jire/Nigella seeds
  • Green chillies
  • Bori/dried lentil dumplings
  • Oil (preferably mustard oil)
  • Poppy seeds whole dry roasted about a one and half tea spoons
  • Potatoes (optional — I usually ommit to avoid carbohydrates)

Preparation –

• Fry Brinjal & bori/ dried lentil dumplings separately in heated mustard oil.
• Leave aside
• Sauté kalojire/ nigella seeds & green chillies in that same oil. Add potatoes at this stage if using them and fry till half done.
• Add the chopped fresh spinach/ palong shak
• Add salt & turmeric powder
• Cover & cook. You shall see water emitting from the spinach.
• Once the water starts getting dry sprinkle the poppy seeds
• After it has fried well, add the fried brinjal and sauté well.
• Add the fried bori. Mix well
• Serve hot.
