Ol Sheddho/ Boiled elephant-foot yam

Yams are extremely beneficial for health and are filled with Vitamin C. If consumed in a fairly regular manner it helps to fight cold and flu and is also beneficial as an anti-ageing agent which also helps strengthen bones. It is a pretty easy and regular affair in Bengali households to eat Ol or Elephant-foot Yam; So named because of its similarity with that of an elephant’s foot in look. This recipe for cooking Yams is the easiest and healthiest perhaps.

 

Ingredients

• Elephant foot Yam or Ol
• Oil, preferably mustard oil
• Red chillies
• Salt
• Mustard Sauce

 

Preparation

• Wash and peel the vegetable.
• Now boil it.
• In a pan heat oil.
• Temper with dried red chilies.
• Now add the boiled vegetable and cook by stirring for a while.
• Add salt.
• Now remove from heat.
• Once it is cold enough for you to touch it, mash well with kasundi (mustard sauce) making sure to mash the dried red chilies alongside.
• Serve with rice.
