Cabbage Pakora
Cabbage is a vegetable mainly found during the winters. It can be cooked in many ways. It can be turned into coleslaw or can be part of a curry. Here is a recipe that can be a perfect accompaniment to a hot cup of tea on a cold wintery evening. In my family it is also common to serve it alongside lentils with rice.
Ingredients
- 2 cups of shredded cabbage
- 1 to 2 green chillies – chopped finely
- 1 tbsp sesame seeds (optional)
- ½ tsp turmeric
- ½ tsp cayenne or red chilli powder
- 1 ½ cups of besan (gram flour)
- 1 pinch of baking soda
- Salt according to taste
- For frying use vegetable oil
Method of Preparation
- Using a cilantro water along with the besan, salt and different spices make a thick batter (be careful not to leave any lumps in the batter)
- Add the sesame seeds, the green chillies and the shredded cabbage.
- Heat oil in a wok to fry the pakoras (before starting test the oil by dropping a little batter into the oil.)
- Then mix in a pinch of baking soda and a teaspoon of the hot oil to the batter.
- Take a spoonful of batter and drop it into the hot oil very carefully
- Repeat this process for a few times and continue to fry till they turn golden all around. After making the first batch continue to make more batches till all the batter has been used up.
- Serve the pakoras hot with ketchup or coriander-mint chutney
