Crispy Garlicky Bhindi/Okra By Aparna Bose

INGREDIENTS:
- Bhindi- 12 to 14
- Besan- one tablespoon full
- Garlic- 7 or 8 cloves(chopped finely)
- Chopped green chillies- as per requirement
- Oil- half tea spoon + 2 tablespoons
- Salt- as per taste
- Sugar- very little (optional)
- Kashmiri mirch powder- as required
- Turmeric powder- as required
- Hing- a pinch
METHOD:
- Wash and pat dry the vegetable. Trim both ends and make one longitudinal slit.
- In a bowl take all the dry spices except hing . Add sugar and besan and mix nicely with half teaspoon oil .
- Now smear the veggie with this thick paste. Keep aside for 5 mins.
- Heat the oil. Add in the chopped garlic . A pinch of hing and fry till brown and aromatic. Add the green chilli and the vegetable.
- Cover and cook over low flame for about 5 min. Stir and cook . Check whether done or not.
- Next, fry for a few minutes on high flame till they are crispy . Take them out on an absorbent paper with a slotted spoon and serve immediately.
