Dhyarosh er Torkari/ Okra curry

Aloo/potato and dhyarosh/lady’s finger are basic vegetables that are commonly used for Indian recipes. The variety of lip-smacking dishes prepared by these veggies can surprise you. This dish is a delicious variation with a few simple ingredients. Do not be fooled by the simple and short list of ingredients, this dish can truly pack a punch, when it comes to flavours. The fact that the veggies are shallow fired, makes the dish quite healthy. It is completely vegetarian, so you could plan on cooking it for pure vegetarian guests. Serve it with roti or paratha, or even with steamed rice and dal; which are a perfect accompaniment for this dish.

Ingredients :

  • 250 g Lady’s fingers
  • 2 Potatoes
  • 1 tsp Nigella seeds (kalo jire)
  • 1 tsp Turmeric powder
  • 1 tsp Chilli powder and/ or green chillies
  • Salt to taste


Preparation –

  • Wash and cut lady’s fingers into 2 inch pieces.

  • Wash, peel and cut potatoes into similar sized pieces.

  • Heat oil in a skillet.

  • Add nigella and sauté till it splutters.

  • Add potatoes and lady’s fingers.

  • Add salt, turmeric, chilli powder or split green chillies, and stir fry till potatoes turn golden.

  • Add ½ cup water. Cover and cook till vegetables are done.

  • Remove cover and cook on medium heat till all the water dries up.

  • Serve hot.
