Gimey Shaak er Chorchori/ Bitter Green Stir Fried
Call me weird, but I like bitter fares as palate cleansers at the beginning of my meal. And we as a family like to include seasonal greens as part of our meals. Also, I reiterate, that Bengali kitchen believes in perking up a dish with minimal spices. This one also needs very little oil. Cumulatively, this is a favourite during the warm days as summer in full blast is rehearsing for its performance in full glory.
Ingredients:
- Gimey Shaak/ Bitter Greens
- Aubergines
- Radhuni seeds (dried fruit of Trachyspermum roxburgianum)
- Ginger Paste
- Mustard Oil
- Green chillies
- Salt
- Turmeric
Method:
- Heat Oil in a pan
- Smear the chopped aubergines with salt and turmeric and fry in medium heat till done. Keep aside.
- Make sure the greens are washed well and chopped
- Temper the oil with radhuni seeds
- Add green chillies (slit)
- Add the greens and stir fry
- The greens shall let out water
- Add ginger paste, salt and turmeric
- Cook the concoction well till most of the liquid is evaporated and the veggies are cooked
- Mix in the fried aubergines
- When the fare reaches the desired consistency, remove from heat
- Allow some standing time before serving with steamed rice
