Kanch Kalar Tarkari/ Unripened Banana Curry

This recipe could be made diabetic friendly if you do not add the potatoes to it. In fact the starch contained in the green raw bananas is known to be beneficial for diabetics and those with high cholesterol level. It also supplies a number of vitamins and is rich in fibre.

Ingredients

  • Jeera/ Cumin
  • Jeera Powder/Cumin powder
  • Hing/ Asofoetida
  • Kanch Kola/ unripened Banana
  • Alu/ potato
  • Nun/ salt
  • Holud Guro/ turmeric powder
  • Lanka Guro/ chili powder
  • Ada Bata/ ginger paste
  • Roshun Bata/ garlic paste
  • Chini/ sugar (Optional)
  • Oil for cooking

Preparation

  • Wash and peel potato and raw
  • Cut them into cubes
  • Heat oil in a pan and temper it with cumin seeds and a pinch of asafetida
  • Add the ginger & garlic paste and the chili powder& cumin powder
  • Now add the cubed bananas and potato pieces
  • Add salt.
  • Let it cook for a while
  • When nearly done, add a little sugar. But this is optional and can be omitted if cooking for people who would like to avoid sugar.
  • Sauté them well and add a little water
  • Cover to cook
  • Turn off the heat when dry
